5 Minute Lunch: Western Omelette Sandwich

Class schedules can make it difficult to find time for lunch, and often you’ll end up buying a sub or slice of pizza just because it’s quick and easy… but these aren’t always healthy options and can put a dent in your wallet. Instead, save money and make a healthy choice by making your lunch at home with this 5 minute recipe.

Western Omelette sandwich

Ingredients
• 2 eggs
• 2 tbsp low-fat shredded cheddar cheese
• 1 tbsp olives
• 2 slices of shredded turkey or ham
• 1 pinch of salt and pepper
• 2 slices of whole wheat toast
• Cooking spray/margarine

Directions
• Beat eggs; grease a microwave safe bowl with cooking spray or butter/margarine
• Pour mixture into bowl and add cheese, shredded ham, olives and a pinch of salt and pepper
• Cover bowl with seran wrap, leaving small one corner up as an opening

• Microwave on high for 30 seconds; lift wrap, stir, re-cover and microwave again for 1 minute
• Meanwhile toast 2 slices of bread; spread with a bit of butter or margarine
• Carefully slide omelette onto one of the slices and make a sandwich. Serve with ketchup.
