Bite-sized banana bread

I have a tremendous amount of respect for people who can have only one slice of banana bread. My “slices” of banana bread consist of roughly a quarter loaf, and who really only eats one slice? 

They’re cute, they’re tasty and as satisfying as an entire loaf. You could also just have one, but that’s up to you.

They’re relatively healthy, so if you do want to sweeten them add chocolate chips or raisins.

Ingredients:

  • 1 egg
  • 1 egg yolk
  • ½ unsweetened greek yogurt
  • ½ cup coconut oil
  • 2 tsp. vanilla extract
  • ½ cup sugar
  • 3 bananas
  • ¼ cup oatmeal
  • 1 tsp. baking soda
  • 1 cup flour
  • 1/3 cup cocoa powder

Directions:

  1. Preheat your oven to 350 degrees and grease a muffin tin
  2. Whisk egg and yolk while slowly adding yogurt and coconut oil *If your oil is not in liquid form, microwave for 5-10 seconds
  3. Mix in vanilla, white sugar, and mashed bananas
  4. Add all remaining ingredients before mixing slowly *Be gentle to avoid overly dense texture
  5. Fill muffin tin almost to the top *Leave roughly a centimeter for rising
  6. Bake for 25 minutes or until toothpick comes out clean
  7. Let cool and enjoy!
