End of summer s'more cookies

The days of summer are dwindling, but that doesn’t mean that our savoury summer favourites have to make their departure with the season’s end. S’mores are possibly one of my favourite memories of camping, but for those low-key weekend staycations, there’s one perfect alternative: s’more cookies.

S’more cookies are especially easy to prepare and bake. Think of these s’mores as a premium cookie – packed with oozy marshmallow bits, chocolate, and crumbled graham crackers.

I can testify that this baking number was a hit in the office, flying off the treat table and leaving many compliments my way. It’s a nice retreat from the simple chocolate chip cookie, and the added marshmallows play up the sweetness factor.

Ingredients:

2/3 cup of salted butter, softened
2/3 cup of brown sugar
½ cup of white sugar
1 egg
1 tsp. of vanilla
1 cup of cake flour
¾ cup of bread flour
½ plus 1/8 teaspoon of baking soda
¾ teaspoon of baking powder
1 cup of coarsely chopped chocolate or chocolate chips
½ cup of crushed graham crackers
1 cup of marshmallows

Directions:

Tips: Extra brown sugar and butter will make for extra chewy and soft cookies. Try not to substitute cake and bread flour for all-purpose, as the cake and bread flour are key to making these cookies soft, light and chewy.

Cream together the butter and sugar.

Next, add the vanilla and egg to the wet ingredients.

Combine all the dry ingredients, including the flour, baking soda, baking powder and salt. Using a hand-mixer combine the ingredients until batter is smooth.

Stir in the chocolate and graham crackers with a large wooden spoon, leaving the marshmallows to be added in after the dough has been separated into little balls.

Preheat oven to 350 degrees. Line your baking tray with foil and begin to place balls of dough an inch apart from one another. After dough is lined up, add marshmallows to the centre and top of the balls of dough. Avoid placing any near the bottom or sides as this may burn during baking.

Next, bake cookies for 12-15 minutes or until cookies look golden brown. Transfer them to a cooling rack. Serve and enjoy these delectable and warm treats!

Other variations: For added visual impact, place regular-sized half marshmallows and squares of chocolate on the top of the cookie.

Alternatively, surprise your unsuspecting taste testers by hiding marshmallows solely in the middle of the cookie. When those cookies are warm, they’ll be oozing with sticky marshmallow goodness – like chocolate bar filling, but better!

Try them out for yourselves, and switch up the amount of marshmallows, chocolate or graham crackers to your personal preference. When you’ve served these to you and your friends, you’ll feel like you’re glamping (glamour camping) without all the outdoor hassle in no time.
