From basic to delish with a mircowave

Eating well as a student is hard — funds are low and schedules are full. It’s easy to associate cooking with high grocery bills and wasted time. Why spend an hour in my kitchen for something I’ll eat in five minutes when I could be in Stauffer?

Using a microwave, elevate your meals and take up less than 10 minutes of your day with the recipes below.

Poached Egg – Two minutes

Ingredients:

  • ½ cup water
  • 1 egg

Instructions:

  1. Pour water in mug/small bowl
  2. Crack egg into mug/small bowl, must be submerged
  3. Cover mug/small bowl with small plate
  4. Microwave for one minute
  5. Remove and see if egg white is firm, if not re-cover and microwave for additional 15 seconds
  6. Remove egg with large spoon, preferably with holes to drain water

Steamed Veggies — Two minutes

Ingredients:

  • Vegetables

Instructions:

  1. Rinse vegetables and cut into bite-sized pieces
  2. Put vegetables in a microwave-safe bowl
  3. Cover bowl with cling wrap
  4. Microwave for a minute and 30 seconds — may vary between vegetables and microwaves

Baked Sweet Potato — Less than 10 minutes

Ingredients:

  • Sweet potato

Instructions:

  1. Scrub your sweet potato under tap water
  2. Puncture potato with fork three times in each side to let out steam
  3. Loosely wrap potato with damp paper towel on microwavable plate
  4. Microwave for three minutes on each side
  5. Unwrap and let cool
  6. Cut in half and put on desired toppings
