Marshmallows, chocolate and bunnies (oh my)

I think we can all agree that the four months of summer always feel like the shortest months of the year. But although the season of pumpkin spice and orange ivy on campus quickly approaches, there’s no need to ditch your campfire dreams just yet.

Rain, sleet, snow or hail – these campfire-inspired s’mores brownies can be made right in your kitchen to keep the feeling of summer alive. They feature a sweet and crunchy graham cracker crumble and, of course, a perfectly toasted marshmallow.

They’re adorable, decadent, packed with chocolate and incredibly easy to make …. So what are you waiting for?

Ingredients (6 brownies):

  • Box of animal-shaped graham crackers (I used bunnies)
  • Bar of milk chocolate
  • Ingredients for your favourite brownie recipe
    • Store-bought brownie mix works as well
    • 2 tbsp butter (melted)
    • 6 large marshmallows
    • Cupcake liners
    • 1 tbsp brown sugar
    • 1 cup graham crackers

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Place 1 cup of graham crackers in a plastic bag with brown sugar               
  3. Put bag on counter and crush cookies (you can use a rolling pin or a pan for this)
  4. Mix crushed graham crackers with melted butter in a bowl
  5. Place cupcake liners in cupcake pan
  6. Pat mixture in thin layer in bottom of cupcake liners
  7. Save remaining crumble!
  8. Prepare brownie recipe
  9. If using a mix, follow the instructions on the box
  10. Fill cupcake liners halfway with brownie batter
  11. Place 1 square of chocolate on brownie batter in cupcake liners
  12. This will give you gooey chocolate in the middle of your brownies!
  13. Fill the cupcake liners with the rest of the batter
  14. Don’t hesitate to fill these up all of the way (they won’t overflow like cupcakes)
  15. Sprinkle remaining crumble on the batter
  16. Bake for 40 minutes
  17. Check after 35 minutes – the bake time may depend on the batter
  18. Let partially cool for 5 minutes
  19. Place 1 marshmallow on each brownie
  20. Turn oven onto “broil” and place brownie pan on top shelf
  21. These brown quickly – keep an eye on your marshmallows!
  22. Take out of the oven and garnish with graham animals and the rest of your chocolate
  23. Enjoy!
